For the easiest fall-to-spring transition, consider oats, field peas, or forage radish in climates where they reliably winter-kill. For strong winter coverage, cereal rye and winter wheat are dependable options, although they require more spring management.
Buckwheat is difficult to beat for a short summer gap, while crimson clover, hairy vetch, and field peas are useful when nitrogen fixation is a priority. Phacelia offers an excellent combination of soil coverage, crop-rotation flexibility, and beneficial insect habitat.
Start with one species or a simple two-crop mixture. Plant it early enough to establish, keep it watered during germination, and decide how you will terminate it before sowing the seed.
